mixer
A machine or mechanical equipment designed to mix the ingredients in a dough. These ingredients would otherwise be mixed by hand, which could take a lot of time to do and would be impractical for large amounts of dough. Adding to this, using a mixer can help control the temperature of the dough during mixing (taking into account the fact that hand mixing necessarily increases the temperature of the dough).
The introduction of the mixer to the bakery environment is a relatively recent one in history. However, not any less important because of it. It has helped to increase the efficiency of the baking process and allowed the baker to work on different tasks simultaneously.
